An appliance thermometer in your refrigerator and freezer is a great way to be sure that foods remain at safe temperatures. Keep it in the refrigerator and freezer at all times to verify that food is being stored at safe temperatures (34 to 40 degrees for the refrigerator. 0 degrees or below for the freezer). If the power is out for 4 hours or less, refrigerated and frozen foods should be safe as long as the refrigerator or freezer doors remain closed. Every time you open them, cold air escapes, causing the foods inside to warm. When power returns, check temperatures and discard any perishable food that has been above 40 °F for two hours or more and any food that has an unusual odor, color or texture. Leave the freezer door closed. A full freezer should keep food safe about two days. a half-full freezer, about a day. If the freezer is not full, group packages together quickly. Arrange meat and poultry together on one side or on separate trays so their juices will not cause cross contamination should thawing occur. Then avoid opening the freezer door to prevent the cold air from escaping. Add bags of ice or dry ice to the freezer if it appears the power will be off for an extended time.
